Tuesday, April 28th, 2009Recently, I was looking through my recipes on my computer. I came across one particular that is a must try for anyone who loves fish and sushi. While living in Canada, I was exposed to the highest quality wild salmon. My good friend Ford Widrig and I were staying at his family’s organic dairy in British Columbia. At the farm, he decided to make some very good Gravlax. He has a keen interest in northern European cuisine and even spent a semester studying abroad in Finland. Anyway, we decided to use some of his high quality salmon and make gravlax over a day or so.
Gravlax is a salted/semi-fermented dish of raw salmon that is served with dill. It is absolutely amazing. Not only does it taste great but it is one of the best post-workout meals out there. Feel free to email me for the recipe as I highly, highly recommend this food.

From Mad Cow to Swine Flu
Monday, April 27th, 2009Recently there has been a new “swine flu” outbreak. Another serious problem in our world food supply. It seems that on a monthly basis, there is a new issue with food. Does it surprise me? Absolutely not. Simply by doing a bit of research on factory farms, livestock raising, poultry houses and the treatment of animals, we can easily see where our issues lie.
While at Penn State, I was teammates with an individual who ran a pig farm in Perry County, Pennsylvania. He would brag about how his family had over 400 pigs under one structure alone. They each had their own little stall with a cement floor and supposedly never got sick. He claimed they never got sick because they wouldn’t go outside and they were fed antiobiotics!!! How backwards is this? Piling over 400 animals under one structure, weakening their system via antibiotics and then wondering why they eventually turn up to have swine flu. Last year it was the tomato scare, this year it is swine flu. Still, the government refuses to promote sustainable agriculture and healthy living. This is quite disturbing.
The part that bothers me the most is the farmers that I buy my meats and raw milk from farmers that go out of their way to maintain healthy, clean farms with healthy, happy animals. They raise the absolute highest quality food you can purchase. These same farms are badgered by the government on a WEEKLY basis. On a weekly basis they get visitors from the government, meanwhile factory farmed animals pollute the food system, kill people and provide terrible nutrition but are continuously allowed to produce under their absurd conditions.
We need to start voting with our wallets. Stay healthy, buy locally produced meats and vegetables. Know where your food is coming from, understand how it is produced and recognize the health concerns of many modern foods. If farmers take mother nature out of the equation, their animals are unhealthy, not nutritious and carry plenty of diseases and genetic disorders. These aspects have a significant affect on those who choose to consume their meat.

Friday, April 24th, 2009Farmers sprayed 200,000 lbs a year in 1945 of pesticides, herbicides, fungicides, etc…in 2000, that number was 2 BILLION pounds of more advanced chemicals. What is the result? Double the amount of crop losses, higher rate of cancer and obesity (some obesity issues can be linked to the higher levels of estrogen caused by these chemicals). They also attack the nervous system, leading to degenerative nervous system disorders. We continue to spend absurd amounts of money on the “medical” industry yet refuse to address the soil health and environmental health that plagues most of our systems. Personally, I do not find any of this to be a coincidence. Use your wallet and start supporting organic farmers, local farmers and farmers who grass feed, rotate their crops and promote BIODIVERSITY!!!
Where is the logic? In 1938, William Albrecht wrote this article. It was groundbreaking and still is groundbreaking today. Perhaps we should take a clue from his wisdom of the past.

Growing Vegetables Becomes Popular
Thursday, April 23rd, 2009It seems a lot more people have gained a greater interest in growing fruits and vegetables. This is quite exciting, hopefully more people continue to grow their own food and spend more time outside. It will be better for the environment, more people will exercise, spend more time outside with family and end up eating healthier. This may also lead to lower health care costs. Hopefully, these trends continue to grow. One thing that scares me is that Monsanto is now out purchasing numerous seed companies and I hope they do not destroy the quality of seeds that are available.
